We have always been growing and treating the finest Tuscan olive varieties - Correggiolo, Moraiolo, Leccino, Olivastra e Olivastrina - with special attention.
We strongly believe in this product, honour the traditional methods and aim at producing that preciuos oil that has been for over a century one of our business focus.
Because of olive cold treatment and early harvesting, our oil is marked by a really low acidity and a great aromatic complexity.
Natural maturation "soften" our product and makes it perfectly suitable also for dishes that require a smooth and balanced oil.

HARVEST SEASON: late october - november
HARVEST METHOD: by hand, storing olives inside well ventilated boxes
not later than 24 hours from harvest. Cold milling
Colour: deep green
Aroma: strong fruity flavour with artichoke notes
Taste: savoury, with slight "pinchy" hints that fade out with natural maturation,
becoming more soft and balanced.
